How do I make sure all bones have been removed when making a stock?
I've started making stocks with the leftover bones after eating meat. The problem is that when making a stock with a poultry/game bird carcass I often find odd bits of bone left behind, that I've not managed to remove.
Would removing the bones BEFORE adding vegetables and herbs make much difference? I ask because at least then I'd be able to see whether I'd removed them all.
Alternatively, is there another way to ensure efficient removal of the bones without spoiling the stock?
Thanks for the answers so far.
I had been told that the vegetables and herbs should be added to the stock at the same time as the bones. Is there any reason for this?
I imagine that adding the vegetables with the bones will allow them to blend together and perhaps in the process the bones may 'activate' or 'draw out' essential properties from the vegetables and vice versa.
If I were you, I would still keep a certain amount of finely chopped raw vegetables separate and add this to the stock, after you strained it. There is nothing like crisp raw veg with the vitamins sealed into the vegetables.
If you boiled chicken bones, I would also take the cartilage from the bone and put that back into the stock as this is extremely good for strengthening the bones immune system. The same applies to the beef bones, I'm sorry my memory has blanked and can't remember the name of the stuff inside the bones. You need to scoop it out off the bone and is most nutritious even though it looks a little fatty. Bone Marrow! Dear oh dear. Sorry about that, but my brains went on holidays. LOL Silly me!

Turkey recipes.?
I will be making a turkey for Thanksgiving this year, I understand how to cook it but I don't know what or how to season it. I know I need lots of butter but as far as spices and herbs what do I use? I have been told there is poultry seasoning out there, is that good or should I use something else. Please hurry I have less then 24 hours to figure this out!
Yes the Poultry seasoning works just fine. I personally like to use just rosemary and thyme.
